Coconut rice with mango

 

This one is a real sweet treat that will definitely make you 'feel well'! The coconut and mango flavours go so well together - it tastes like being on holiday somewhere exotic! 

Ingredients (serves 4)

  • 100g pudding rice
  • 30g caster sugar (optional)
  • 700ml coconut milk
  • Sprinkle ground vanilla
  • 1 mango cut in to chunks to serve

 

Method

  • Lightly grease a baking dish with some butter or a suitable alternative
  • Rinse the rice in a sieve under cold water
  • Place the rice, milk, sugar (if using), and vanilla in to the dish and stir
  • Cook at 180° for 2 hours
  • When the rice is cooked through and the milk absorbed, allow to cool slightly before serving with chunks of fresh mango
